Kumdo Bharta



Pumpkin or Kumda is a vegetable that we south-Indians mostly use in sambar. I tried preparing my ersion of the Bengali Kumdo Bharta and it turned out fine!

Ingredients: (for three people)

250 gms of red pumpkin 

2 onions (chopped finely)

3 tomatoes (chopped finely)

1 tsp ginger-garlic paste

1 tsp cumin seeds for seasoning

a pinch of hing

spices - 1/2 tsp turmeric powder, 1 tsp chilli powder

salt

coriander leaves

Method:

Dice the pumpkin into small cubes and boil them in water with some salt and a pinch of turmeric, until they turn really soft and mushy. Set aside for cooling.

In a pan, heat mustard oil. Add cumin seeds and hing. Once they turn aromatic, add ginger-garlic paste and onions. Saute them for few minutes and then add the tomatoes. Add the spices and let the veggies cook for few minutes. Once the veggies start releasing oil, add the pumpkin cubes and mash everything together. Add salt and coriander leaves and serve hot!

Tip:

Kumdo Bharta tastes best when made with mustard oil. It lends a very distinct aroma to the dish. It can be had with Roti as well as rice.
