On the days of Ekadashi, we avoid rice and usually make all meals out of wheat. Here is a simple recipe, a Dosa made of tomato and wheat flour that is extremely easy to prepare, healthy and tasty too!
Ingredients:
3 tomatoes
1 green chilly or red chilly
few curry leaves
8 ladle-measures of wheat flour (This makes about 20 Dosas)
Salt
Spices - 1 tsp Coriander powder, 1/2 tsp Cumin powder, 1/2 tsp turmeric and 1/2 tsp red chilli powder.

Method:
Grind the tomatoes, curry leaves and chilly into a fine paste. Add this paste to the wheat flour, along with salt and the spices mentioned above. Add required quantity of water and prepare a batter of medium consistency, neither too thick nor too thin. Add the coriander leaves to the batter and prepare thin Dosas by adding oil or Ghee.
Tips:
- Adding one or two teaspoons of semolina (Rava) gives a crispy texture to the Dosa.
- You can also add a pinch of Hing, crushed Ajwain and chopped onions to the batter.
- The Dosas taste best when had hot and with a pickle as side-dish!
