Lauki - Palak Thepla



Here's a different combination of veggies that you can use while preparing paratha / thepla. The difference between both is that, thepla is generally prepared using curd. 

Ingredients:

1 large bowl of grated lauki

1 large bowl of washed and finely diced palak

10 ladle-measures of wheat flour (makes about 20-25 theplas depending on size and thickness)

For marination:

2 tbsp curd

a pinch of hing

salt as required

1 tsp sugar (optional)

1 tsp coriander powder

1/2 tsp cumin powder

1 tsp crushed ajwain

1/2 tsp turmeric

1 tsp red chilli powder

Method:

Marinate the curd and the given ingredients and set aside for ten minutes.

Add some salt to the grated lauki and palak and set aside for ten minutes. Lauki will release water. Squeeze out the water and save it for the dough. To the mix of Lauki and Palak, add the marinated ingredients, wheat flour and mix all together. Add the water squeezed from lauki as per your requirement and prepare a soft dough. Roll out tasty theplas using oil or ghee!

Tips:

Instead of palak, you can also use methi and coriander leaves. 

Beat the curd thoroughly before marinating. It lends more softness to the dough.
