
Someday we will be able to find the answer to the ultimate question of all times - How did the weekend fly by so soon?
Monday mornings feel even more hectic than usual. To combat this, I have started planning for two to three days ahead, so that I feel prepared to meet the day.
Today's breakfast included healthy doses of Broccoli, something that we should eat but most of us don't. This veggie is high in anti-oxidants that can help to fight diseases like cancer and is believed to give high immunity.
Here is a healthy paratha made of Broccoli, cauliflower and carrot.
Ingredients: (for roughly 20 - 25 parathas)
4 to 5 large florets of broccoli and cauliflower each
3 small carrots
a pinch of hing
spices - 1/2 tsp turmeric powder, 1/2 tsp chilli powder, 1 tsp coriander powder and 1/2 tsp cumin powder
10 ladle-measures of wheat flour
salt
Method:
Wash the veggies and grate them.
In a pan, heat some oil. Add hing and the spices. Then add the grated veggies and salt and stir-fry them until they are cooked and turn aromatic.
Once the veggies are cooled, mix them with wheat flour and prepare a soft dough. Roll out chapatis / parathas using either ghee or oil.
Tip:
Broccoli is an acquired taste. So it is best to use it in small quantities if there are picky-eaters in your family.
